Evidence which suggests that lead, certain kinds of dietary fibre, phytates and tannins inhibit copper utilization are reviewed. It is believed that Cu intake in the USA has declined in recent years to a value that might be considered dangerously low. In such conditions, other dietary factors which inhibit Cu utilization might be of concern as otherwise marginally adequate Cu diets might be made Cu deficient.
