Brief information is included on the new dairy in Lusaka with particular reference to UHT milk. The milk is produced using Alfa-Laval VTIS sterilizers and 11 Tetra Pak aseptic packaging machines with a total capacity of 45 900 cartons (0.25 and 0.5 l. sizes)/h. The milk is either fresh, or recombined from imported butterfat and dried skim-milk. Efforts are being made to increase domestic milk production by setting up dairy farms to encourage local farmers to produce milk; these farms also function as milk collecting centres.
