Miniature scale HTST/UHT sterilization units are described that allow samples to be continuously thermally processed at a throughput of 10 litres/h under simulated commercial conditions. A plate heat exchanger for liquid samples has been designed to accommodate turbulent flow at low throughputs, whilst a scraped-surface heat exchanger for viscous samples has 3 interconnected scraper barrels for preheating, final heating and cooling.
