General guidelines vs. actual determination of square footage requirements

Two constrasting methods of calculating square-footage requirements for hospital food service facilities are described. A total of 4 hospitals were included in the study. It is concluded that, while general guidelines are useful, it is neccessary to determine the square footage requirements for each functional area of the food service facility. (wz)
