The introduction of the dairy development programme Operation Flood in India has increased milk production from approx. 25 million t in 1970 to approx. 55 million t in 1990/91. Per capita availability of milk has also increased from 41 kg/yr in 1975 to 65 kg/yr in 1990/91. The main milk production area is in N. India, with 45% of production centred around Delhi. Approx. 45% of the milk produced is consumed as liquid milk and the remainder is converted into a wide range of milk products, including ghee. Milk price and the future success of Operation Flood are discussed.
