Nitrite in human saliva. Its possible relationship to nitrosamine formation

Saliva was collected 1 h before and after meals of different foods. While saliva had nitrite 1 to 9.6 X 10-6, the concentration was not much affected by the type of food and it varied widely between samples for some persons and not for others. There was no nitrite in saliva taken from parotid duct, and most nitrite was from microbial reduction of nitrate present in the saliva. Organisms forming nitrite were species of Corynebacterium, Fusobacterium, Nocardia, Staphylococcus and Veillonella.
