This paper focuses on the cheese industry in Iceland, which has the world's highest per capita milk consumption and annual per capita cheese consumption of 13.6 kg. Whilst Gouda and 'Bread' cheese account for a major proportion of the market, other cheeses are gaining in popularity and there is a demand for innovative and novel cheeses. Changes likely to occur in the Icelandic cheese industry as a result of removal of import barriers in 1996, are discussed.
