Nitrites were determined in frankfurters, ham, sausage, cheese, ground beef, carrots, rutabaga, blood serum and saliva. A 2% acetic acid solution was used as an extracting agent. Up to 65-70% of nitrites introduced were detected using the Nelson reagent. The elimination of Mn sulfate and Zn powder from the reagent mixtures increased nitrite detection in the mixture up to 94.62 .+-. 18.21%.
