Growth and deoxyribonuclease production by enterogenic Staphylococcus aureus-S6 in milk and broth

Samples of raw, pasteurized and sterilized buffaloes' full cream milk and 10% reconstituted non-fat dry cows' milk (NFDCM) and brain heart infusion (BHI) broth, were inoculated with 1000-5000 cells/ml of an enterotoxigenic strain of S. aureus-S6 and incubated at 45.degree., 37.degree., 22.degree. and 7.degree. C. Considerable variations were noticed in regard to growth rate, DNase production and pH in different types of milk. Maximum growth was noticed at 37.degree. C after 24 h in sterilized 10% reconstituted NFDCM, followed by sterilized full cream and raw full cream buffaloes' milk. Staphylococci grew well at 45.degree. C in all the 3 types of milk and in BHI broth. The above organisms did not grow in BHI broth at 7.degree. C. DNase production was more in sterilized 10% reconstituted NFDCM and in sterilized full cream buffaloes' milk than in raw and pasteurized full cream buffaloes' milk.
