A review of major results of analyses in industrial microbiology was presented from the Institute of Microbiology and Virology of the Academy of Sciences of the USSR [Kiev, USSR]. The genera Leuconostoc, Streptococcus, Lactobacillus, Bacillus, Clostridium, Candida, Rhodotorula, Torulopsis, Sporobolomyces, Trichosporon, Cryptococcus, Rhodosporidium, Pichia and Penicillium were included in discussions of lactic acid bacteria groups, effects of lactic acid bacteria bacteriophages in the production of butter and cheese, lactic acid bacteria life cycles, biological preservation of plant material, causative agents of contamination in the fermentation industry (wine), lactic acid bacteria in epiphytic and rhizosphere microflora of plants, lactic acid bacterial development in the intestinal tract (humans and fish), bread baking microbiology, canning industry microbiology, champagne industry, ecology of hydrocarbon assimilating microorganisms, yeast selection, carotenoid synthesis by yeasts, thermotolerant characteristics, nature of interrelationships of yeasts and bacteria and the use of synthetic alcohols.
