Methods and findings are reported from a comparison of the nutritional status of elderly men and women in nursing homes who were offered the same foods. Nutrient intake of the subjects and biochemical measurements indicative of nutritional status are reported. Tables show statistics regarding levels of serum protein, blood urea nitrogen, serum cholesterol, serum triglycerides, hemoglobin, hematocrit, serum iron, vitamin A and other factors. Suggestions are made regarding food preparation and attention to patients' individual needs.
