Samples of caribou, seal, and Arctic char were collected and analyzed for proximate components, vitamins, minerals, amino acids, and fatty acids. Caribou and seal meats were similar to beef in protein and fat content. The amino acids in seal and caribou were also similar to beef, except that seal meat was lower in the sulfur-containing amino acids and much higher in histidine. Arctic char was higher in protein and fat than the average for fish in general. Baby seal liver contained significant amounts of ascorbic acid. Both seal and caribou meats were high in the B-vitamins, folacin, and pantothenic acid. These Eskimo foods were higher in iron than the meat group of a mixed Canadian diet.
