Prevention and treatment of esophageal cancer in China

The incidence of esophageal cancer in northern China was analyzed in relation to diet. Grains in high incidence areas had more nitrites and amines than in low incidence areas. Measures were taken to reduce the level of these compounds in food and drinking water.
