Immunoglobulins were detectable in 23 out of 24 fresh human milk samples after heat treatment at 60 deg C for 10 min, but in only 2 out of 24 samples following heat treatment at 75 deg C for 10 min. When the holding time was extended to 30 min at 60 deg C there was little change in immunoglobulin content, but at 70 deg C, only 2 out of 24 samples contained detectable levels of immunoglobulins after 30 min, compared with 13 of 24 samples heated at that temp. for 10 min.
