With the respiratory method the rise of metabolic rate (specific dynamic effect, SDE) was estimated in laboratory rats given gluten, peas, cottage cheese and ham. The SDE was greatest after ham ingestion, which is a product of high nutritional value; after gluten, which has a low protein value, SDE was lowest.
